We have mentioned before
that eating pizza in Italy is far different than our experience in the States.
First of all, the dough is
distinctive. It is lighter with bubbles in it and has been yeast-fermented
anywhere from 8-24 hours. Because of this it is far easier to digest, and has a
sourdough flavor.
Then there are the
toppings.
In Italy, it's all about
the toppings on this Biga pizza dough, not about "double sauce, double cheese
and double pepperoni."
It's a whole different
understanding.

So we're in Naples now, and after
our
delicious encounters with pizza in Anzio, we were curious as to what we'd
find here.
Naples is considered to be the birthplace of pizza
and one of the unusual styles
of pizza that Naples offers is deep-fried pizza.
We tried over and over to order
this unusual delight, but the timing was wrong, or the shops weren't open or we
needed to come back after 7pm for when this fried pizza would be served.

Even though we were unable to enjoy this
new-to-us pizza treat, Pizza & Sfizi offered some other delicious options.
There were grilled sandwiches, saltimbocca and spit-roasted chickens,
too.
Overhead menu board
This pizza place was located just around the
corner from
our apartment, so it was a quick walk for us to get here.
Because of the
Arab
influence, Kababs (as
seen on the menu above) were easily found everywhere in southern Italy.
Every city and restaurant is different. When
we saw this overhead menu board, it wasn't really clear to us what they were
offering.
We went there for the fried pizza, but this
wasn't being served until 7pm.
Another Pizzaiolo
The kitchen is very clean and shiny, which
was a good sign!
So once we figured out what we wanted, we sat
down and waited for it to be delivered.
A Margherita Pizza
Simple, and remarkably tasty, the Margherita
pizza is always a good option.
This particular pizza was invented in 1889 in
honor of the Queen of Italy. Her name was Margherita of Savoy and there was a
big deal going on about the unification of Italy at that time.
The toppings are a
reflection of the colors of the Italian flag - red tomatoes, white mozzarella
and green basil.
Notice that the Biga dough is
puffy with air bubbles from the yeast which makes it a really light dough.
It has also been blistered by the pizza oven which adds yet another flavor.
The pizza dough is every
bit as good as the part with the toppings. There is not a lot of sauce!
Spinach and sausage pizza
Since we had a microwave at the apartment, we
decided to order this spinach and sausage pizza for later on and for the
following day.
This is a true "Pizza Pie"!
A beautiful lacey top of dough that is crisp
and sourdough flavored.

Southern Italy is a sort of
a delicatessen
society with people eating pizza, take-out, and items purchased from nearby
Salumerias.
Since we had a balcony at our apartment, we
could easily enjoy a meal or two outside and watch daily life go by.
Our bill
Since there is no standardized tipping in
Italy, many places simply charge a "coperto" which is a cover charge of a Euro
or two per person for sitting down at their table.
The Ruchetta was our Spinach and Sausage
pizza, a liter of natural water, 2 glasses of red wine, and our Retina (Margherita)
pizza.
The total came to $28Euros or about $30USD.
Would we recommend Pizza & Sfizi?
