The Ceviche Man

Unlike Mexico,
Guatemala is not known for its street food. However there are
exceptions.

The Ceviche Man - Elden otherwise known as Kili
Mexico offers
dynamic, tasty street food with all sorts of sauces. It can be chicken, beef,
pork, snacks and even dessert but it's bound to be tasty. Guatemala has a more traditional cuisine, and
most of it is sold in small sit-down restaurants instead of on the street.
Kili has a moveable, outdoor
place where he mixes up fresh ceviche daily.
It is consistently packed
with people who know the quality of his product, and we often stand in line to
order take out.

The main church in
Panajachel
Right across from Kili's
place is the 500 year old stone church built in the 16th century after the
Spanish and their Maya Kaqchikel allies defeated the Tz'utujils, another Maya
tribe. This church and its
plaza is a place of action, gatherings and events. It has a stately beauty set
against the caldera of the lake.

Kili tosses freshly chopped tomatoes, onions,
spices, shrimp, and lime in a bowl for each individual order. One can have this
ceviche with or without minced garlic and hot sauce. We take both.

The finished product
!Voila! A 20 Quetzal cup of shrimp ceviche
ready to eat! This will feed the two of us and comes with a side of saltine
crackers.

your way to the old church and find Killi. He'll make you up a tasty treat!
