One Meal a Day

Billy and Akaisha Kaderli

Traveling can be stressful enough with going from town to town, staying in strange hotel rooms, navigating the city's unfamiliar streets and dealing with the unknown location of restaurants.

In Europe, Mexico, Central and South America, even Asia, Australia, Bali and New Zealand, it is not unusual to cook a meal in one's hotel room. Years ago we decided that if we could eat just one meal a day in our room, we could save a small fortune.

Think about it. Breakfast costs for two with tax, tip and coffee could easily be $20 a person and that would calculate out to $1200 a month.

I know, eating a meal in one's hotel room and saving money might not sound sexy. But for us, getting up slowly and easily in the morning, making coffee in our room, relaxing while we are reading the news and checking the financial markets is a good thing.

Sweet. Comfortable. Homey.

We take our time to shower and prepare for the day with no rush or starving stomachs pushing us out of the room.

Sometimes we will use leftovers from yesterday’s huge meals such as steak, a quesadilla, or pork chop. Then we'll place cheese, nuts, or fruit and if we find a great bakery we'll add a croissant or pastry. This makes for an enjoyable non-rushed morning before heading out for our day’s adventures.

On occasion, and certainly depending on the weather if it is raining, we'll make some dry packaged soup for dinner. Add an avocado and some cheese or whip an egg in the hot broth and we have a delicious meal. Or maybe a can of black beans, some sausage and onion with cheese on top and we are good to go!
