It hit me all at once last
night—the quiet, profound gift Akaisha is giving me.
I’ve said it many times
before: caregiving for the person you love more than life itself drains you in
ways you never imagined. The thousand small tasks she once handled without a
second thought now rest on my shoulders. Akaisha has always been a force—an
independent producer, a creator, my perfect partner. We built our life and our
work side by side.
Now everything has shifted.
The repairs, the garden, the website, the stories… and especially the kitchen.
My usual responsibilities have to bend around her needs and her schedule. But
she remains at the very center of my world. When she needs me, I’m there
instantly. Even when she doesn’t, my eyes rarely leave her. Every step she
takes, I’m watching—heart in my throat—ready to catch her if she falls. Her
safety has become my constant, quiet prayer.
There are days I feel crushed
by it all. The finances, the creativity, the simple desire for a moment to
myself—they slip away. I’ve caught myself complaining to friends, ashamed of the
exhaustion in my voice.
Then came last night.
I sat in the stillness,
watching the sky paint our garden in fiery oranges and soft pinks as the sun
slipped away. In that golden silence, the truth washed over me like a wave.
What an incredible gift she
is giving me.
Yes, I would care for her a
thousand times over without hesitation. Her happiness, her comfort, her
dignity—these are my deepest joy. But there is something more tender unfolding
here.
Cooking has always been my
passion. I love it with my whole heart. For years she shared the kitchen with
me, creating her own dishes and giving me precious breathing room. Now every
meal—breakfast, lunch, and dinner—is mine to craft with love. Every pot, every
pan, every messy bowl is mine to clean afterward. Some days the kitchen looks
like a battlefield.
Yet in that beautiful burden,
I’ve discovered something precious. I can no longer rely on old standbys. I’m
forced to reach deeper, to create, to grow. I’ve begun dry-aging beef, exploring
new seafood, crafting sauces I once only dreamed of. Chapala is blooming into a
food lover’s haven, and I’m here for every glorious discovery.
The quality of meat, the rich
lamb, the incredible cheeses, the competing fishmongers—it’s a golden age for
ingredients, and I’m soaking up every moment. Friends send photos of meals from
around the world, and instead of feeling left behind, I feel challenged and
alive. I rush to recreate those dishes with my own twist, pouring my heart into
each plate.

And when I set that food
before Akaisha—my greatest fan—her smile, her delight, her soft “thank you”…
those moments fill me with a happiness I’ve never known before.
We could mourn the travels
we’ve had to set aside. We could grieve the old life. But instead, we’ve found
something deeper: a new chapter built on love, creativity, and quiet devotion.
This life may look different, but it is rich with meaning.
And yes… those dishes keep
calling my name.
I wouldn’t trade this gift
for anything.
